Ingredients:

For the Steak, Bacon, and Vegetables:

  • ½ kilo flank steak
  • 2 tbsp. olive oil
  • 2 tbsp. ground coffee
  • 1 tsp. garlic powder
  • ½ tsp. cayenne pepper
  • 4 slices of bacon, chopped
  • ¼ cup of diced shallots
  • 1 bunch of asparagus, trimmed
  • 1 can Green Peas
  • Scallions, thinly sliced
  • Parsley, chopped

For the mustard vinaigrette:

  • 1 garlic clove, grated
  • 1/3 cup Dijon mustard
  • 1 tbsp. red wine vinegar

Directions:

  1. Rub 2 tablespoons of olive oil all over the flank steak.
  2. In a small bowl, mix together ground coffee, garlic powder, ½ teaspoon cayenne, salt, and pepper. Once mixed, rub the mixture all over the steak.
  3. Let the steak sit at room temperature for at least 30 minutes.
  4. While letting the steak rest, assemble the mustard vinaigrette by mixing the garlic, Dijon mustard, vinegar, honey, ¼ teaspoon cayenne, 1/3 cup of olive oil, and water in a small bowl. Whisk until combined then add salt and pepper to taste. Set it aside until it’s ready to serve.
  5. Preheat a pan over medium-high heat.
  6. Add the chopped bacon and cook for 5 minutes until crispy. Remove and set aside once done.
  7. On the same pan with the bacon, add the flank steak. Cook for about 4 minutes on the first side, then flip and continue to cook for another 2-4 minutes. Once done, place the flank steak on a cutting board for slicing.
  8. Remove all the excess oil from the skillet until there’s about a tablespoon left. Turn it to medium heat and add shallots along with salt and pepper. Cook until softened.
  9. Add in the green peas with a splash of water and cook until peas are tender. Then add the asparagus stems.
  10. Once done, remove the skillet from the heat, slice and place the flank steak over the vegetables and drizzle it with the mustard vinaigrette. Lastly, garnish with scallions and fresh parsley before serving.
