Directions:

  • 1 cup of ginger, chopped

  • ¾ cup of onions, chopped
  • Hot pepper, chopped
  • Green onions
  • Salt and pepper
  • 4 tbsp. vinegar

Directions:

  1. Chop the sardines into small square pieces.
  2. Transfer the chopped sardines into a warm pan. Add ginger and bell pepper and mix.
  3. Cook on low heat. Wait about 2 minutes then add the onions and eggs. Mix them well.
  4. Pour in the vinegar. Then, add salt to taste. Finally, add hot pepper and mix everything together.

  • Cucumber, thinly sliced
  • 3 large eggs

Directions:

  1. In a small bowl, mash the sardines with a fork.
  2. Once finely mashed, mix in chopped onions, red chili, calamansi juice, and season with salt and white pepper. Mix well, and set aside.
  3. Beat 3 eggs in a small bowl; season with salt and pepper.
  4. Lightly oil a non-stick pan and place over medium heat until hot.
  5. Pour half of the egg mixture into the pan. Try to cover the whole bottom part of the pan with the egg mixture to ensure it’s as thin as possible. Once it sets, flip so that the top side is cooked as well.
  6. Once done, fold the egg and cut it in two using a spatula. Remove it and set aside.
  7. Spread butter on a piece of bread then layer the ingredients. Place a thin piece of omelet on the bread, then the sardine mixture, then the cucumber. Put another piece of bread on top.
